Jazz is all about hitting the important tones, and "blowin' the changes". Don't think exclusively in terms of key because many progressions aren't diatonic and don't let yourself get too carried away with running various scales, but instead focus on chord tones, chord extensions and or color tones, ...

I run cubase sx3, which is LIGHTYEARS beyond what garage band is intended to do. Other than Pro Tools HD, Cubase is right up there....I've never used the LE, but sx3 is excellente.
