Ingredients
3 large leeks, coarsely chopped
3 garlic cloves, coarsely chopped
1/2 teaspoon fresh thyme
2 lb gold potatoes, peeled and cubed
1 1/2 tablespoons olive oil
4 cups unsalted vegetable stock (or water)
1 teaspoon kosher salt
1/4 teaspoon pepper
1 Hass avocado, cubed
2 tablespoons fresh chives, finely chopped
1/2 cup plain, nonfat Greek yogurt

Preparation
Chop well-rinsed leeks (white part only; 2 cups); chop garlic and thyme.
Peel potatoes and cut into 1/2-inch cubes.

Steps
Preheat large stockpot on low 2–3 minutes. Place oil in pan, then add leeks and garlic; cook and stir 7–8 minutes or until tender (do not brown).
Stir in stock, salt, pepper, potatoes, and thyme; bring to a boil. Reduce heat to low; simmer 20 minutes or until potatoes are tender when pierced with a fork.
Remove pan from heat; puree soup with a stick blender. (Or you can use an electric blender; let soup cool 5–8 minutes, then puree in batches until smooth.) Chill 1 hour, stirring occasionally, or until cold.
Cut avocado into small cubes; chop chives. Stir yogurt into soup; top each serving with avocado and chives. Serve.

My favourite sandwich these days:

Multi-grain toast, spread a lil' sour cream, sprinkle on some ground flax seed.
Mixed baby greens, sliced avocado, tomato, and cheese.

tastes wonderful, feels even better. 8) Keeps my energy up.

I probably posted about them before, but right now, Amy's Kitchen meals are my go-to.
I have no freakin' enery, coz I've been sick, and Amy's has been a life-saver.
Organic, all veg, some vegan. All delicious.

I'm vegeterian as well and I feel awesome, the only problem is that no one in my family understand me why?My family eat meat since ever, but when I read about ingredient in sausages and other meat I have decided to quit eating meat. Since then Every time when we having family dinner whey always comment my choice. I will be more then happy If to exchange recipes.

Yeah, I got a lot of questions from my family, too. I just laid out the facts when they'd ask me why I changed to veg. Any time you make a big change in your life, particularly if you're the only one doing so, there's gonna' be questions. Sometimes, people get uncomfortable with change. Sometimes, they worry because they don't fully understand. Just respond with patience and some well-researched facts along with your personal reasons.

What matters most is that you do what feels right and healthy for you, and that you're getting what you need (Vitamin B-12, Zinc, Iron, etc...)

Recipes? Post 'em! I'd love some more ideas! 8)

Just a wee note...
The red sauce that goes for the lasagna recipe also works beautifully for a big ol' plate of yummy 'pasgetti' (as my beloved omnivore husband likes to call it, lol!)

And if you're not a fan of chunky pasgetti sauces, you just leave out the mushrooms. 8) it's still awesome!
