This guy isn't really known as a guitarist as such, but is a FREAK. Jack Jones, who sung for an aussie band called Southern Sons. Incedently, Virgil Donati was in the same band. Anyway, Jack is just an awesome guitarist though he'll never be known for being so.
Brett Garsed. He was awesome with John Farnham, and I lost touch with what he did until seeing him play with Vai in Sydney recently, but he's great.
The Edge? You have to be kidding. He'd have to be the most OVER rated guitarist in history. Haha.
Another aussie called Diesel (Mark Lizzotte in the U.S) is also a great player, and you should check himout if you can. Saw him do an acoustic show recently and just amazing. So much talent, going so un-noticed.

Defining underrated is too subjective for me. Having said that, I feel the following guitarists deserve so much recognition and success:

Frank Zappa is the ultimate underated guitarist to me. Lots of people don't seem to understand his playing. He has such a unique style, i couldn't compare it to anyone else.

There's tons upon tons them, and most haven't had enough success that you'd even know their names or if they were standing right in front of you.

I agree on Prince. Ive developed a new respect for him recently, as i never realized he's a good guitarist until i payed closer attention. Although im not a fan of the guitars he plays
Some other overlooked guitarists:
Steve Howe from Yes (this guy is amazing why does noone mention him)
Robert Fripp from King Crimson (it seems everything went over the g3 crowd's heads)
Chuck Shuldiner from Death (R.I.P. chuck, you invented real metal)
Bill Frizelle (this guy has to be one of the most unique players ever)
